SCALLOPS

  • INGREDIENTS

    • 12 large scallops, cleaned and removed from the shells
    • 2 tablespoons olive oil
    • 3 cloves garlic, minced
    • Zest of 1 lemon
    • Juice of 1 lemon
    • 1 teaspoon red chili (adjust depending on level of spice you like)
    • Salt and black pepper to taste
    • Fresh parsley, chopped, for garnish
    • Lemon wedges for serving
  • METHOD

    1. Prep the mixture

    • In a small bowl, mix together olive oil, minced garlic, lemon zest, lemon juice, chili, salt, and black pepper.

    2. Prep the scallops

    • Pat the scallops dry with a paper towel and brush them with the prepared lemon and garlic mixture.

    3. Cook the scallops

    • Preheat a grill pan over medium-high heat.
    • Place the scallops on the preheated grill pan. Grill for about 2-3 minutes per side, or until they develop a nice grill mark and are cooked through. Be careful not to overcook as scallops can become tough.

    4. Serve

    • Remove the scallops from the grill and place them back into the cleaned shells for serving.
    • Drizzle any remaining lemon and garlic mixture over the scallops.
    • Garnish with chopped fresh parsley.
    • Serve the Grilled Scallops in Shells immediately.
