SCALLOPS

INGREDIENTS
- 12 large scallops, cleaned and removed from the shells
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon
- 1 teaspoon red chili (adjust depending on level of spice you like)
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
- Lemon wedges for serving

METHOD
1. Prep the mixture
- In a small bowl, mix together olive oil, minced garlic, lemon zest, lemon juice, chili, salt, and black pepper.
2. Prep the scallops
- Pat the scallops dry with a paper towel and brush them with the prepared lemon and garlic mixture.
3. Cook the scallops
- Preheat a grill pan over medium-high heat.
- Place the scallops on the preheated grill pan. Grill for about 2-3 minutes per side, or until they develop a nice grill mark and are cooked through. Be careful not to overcook as scallops can become tough.
4. Serve
- Remove the scallops from the grill and place them back into the cleaned shells for serving.
- Drizzle any remaining lemon and garlic mixture over the scallops.
- Garnish with chopped fresh parsley.
- Serve the Grilled Scallops in Shells immediately.
