PRAWN SANGAS

  • INGREDIENTS

    For the Panko Crusted Prawns:

    • 12 large prawns, peeled and deveined
    • 1 cup panko breadcrumbs
    • 2 eggs, beaten
    • Salt and black pepper, to taste
    • Cooking spray for the Airfryer

    For the Dill Mayo:

    • 1 cup good quality mayonnaise
    • 2 tablespoons fresh dill, chopped
    • 1 tablespoon Dijon mustard
    • 1 teaspoon lemon juice
    • Salt and black pepper, to taste

    For Assembly:

    • Fresh white bread, sliced and cut into circles
    • Cos lettuce leaves, washed and dried
  • METHOD

    1. Prepare the Panko crusted prawns

    • Preheat the Airfryer according to the manufacturer's instructions.
    • Season the prawns with salt and black pepper.
    • Dip each prawn into the beaten eggs, ensuring it's well-coated.
    • Roll the prawn in panko breadcrumbs, pressing gently to adhere the crumbs.
    • Place the panko-crusted prawns in the Airfryer basket, spray with cooking spray, and air fry until golden and cooked through (typically 8-10 minutes at 180°C or 360°F, but follow your Airfryer's guidelines).

    2. Make the dill mayo

    • In a bowl, mix together mayonnaise, chopped fresh dill, Dijon mustard, lemon juice, salt, and black pepper.
    • Adjust the seasoning to taste.

    3. Assemble the sandwiches

    • Take a circle of fresh white bread.
    • Spread a generous amount of the dill mayo on the bread.
    • Place a cos lettuce leaf on top of the mayo-covered bread.
    • Add a couple of panko-crusted prawns on the lettuce.
    • Top with another slice of bread, creating a sandwich.
    • Repeat for the remaining sandwiches.
