PASSIONFRUIT MARGS

  • INGREDIENTS

    • 45ml reposado tequila (get the good stuff!)
    • 15ml Cointreau (or triple sec of your choice)
    • The juice of 2 limes
    • The pulp of 2 passionfruits
    • Lots of ice
    • Flaky salt (get a high quality one, we love Maldon!)
    • Dehydrated fruit or half a passionfruit for garnish
    • Optional - If you like it sweet, you can make your own "simple syrup" using equal parts sugar and water and 2 passionfruits, we usually use 1 cup of water and 1 cup of sugar. Use 30ml of Simple Syrup in your cocktail mix.
  • METHOD

    1. This is optional if you like it sweet - Prepare your simple Syrup

    • Add equal parts water and sugar (usually 1 cup of water and 1 cup of sugar) to a saucepan with the pulp of 2 passionfruits and simmer until the sugar dissolves.
    • Strain the mix into a container so you can store in your fridge to use another day, it can store for up to two weeks.
    • Set aside to cool down.

    3. Prepare your salt

    • Lay a good amount of your flaky salt out on a round saucer or beautiful tray, for easy dipping!

    4. Prepare your glass

    • I like to use an Old Fashioned style whiskey glass, because I love my Margarita's over ice.
    • Salt the rim by sliding a cut lime around the top of the glass, and dipping it on your salt mix plate.
    • One this is done, fill the glass to the top with ice.

    5. Make the cocktail

    • In a shaker, pour the juice of 2 limes (add more if they are not very juicy), your passionfruit pulp, Cointreau, reposado tequila and optional simple syrup.
    • Fill the shaker with ice.
    • Shake, shake, shake!

    6. Assemble the cocktail

    • Strain the mix into your prepped glass.
    • Add your garnish - I love using dehydrated fruit.
