MACADAMIA HAM GLAZE

  • INGREDIENTS

    • 1 jar (approx 250g) good-quality orange marmalade
    • 1 tablespoon Dijon mustard
    • 100 grams brown sugar
    • 1 cup orange juice
    • 1 bag (about 150g) macadamia nuts, chopped
    • 1 fully cooked ham, the bigger the better so you can enjoy for the week after Christmas
  • METHOD

    1. Preheat the Oven:

    • Preheat your oven to 180°C (350°F).

    2. Prepare the Glaze:

    • In a saucepan, combine the orange marmalade, Dijon mustard, brown sugar, and orange juice. Place the saucepan over low heat and simmer the glaze, stirring occasionally, until the brown sugar has dissolved and the mixture has thickened slightly. This usually takes about 10-15 minutes.

    3. Score the Ham:

    • Using a sharp knife, score the surface of the ham in a crisscross pattern, creating diamond shapes. This will allow the glaze to penetrate and flavor the ham.

    4. Baste the Ham:

    • Using a basting brush, generously brush the ham with the prepared glaze, making sure to get the glaze into the scored areas.

    5. Bake in the Oven:

    • Place the glazed ham in the preheated oven. Reglaze the ham every 15 minutes with generous amounts of the glaze to build up flavor.

    6. Add Chopped Macadamia Nuts:

    • Once the ham begins to brown, take it out of the oven and generously sprinkle the chopped macadamia nuts over the top, pressing them gently into the glaze.

    7. Continue Baking:

    • Put the ham back in the oven and continue baking until the macadamias are golden brown, and the ham reaches the desired internal temperature (usually around 70°C or 160°F).

    8. Rest and Serve:

    • Allow the ham to rest for a few minutes before slicing. Serve the ham slices with the delicious macadamia glaze.
